Title: Low Carb Pancakes

Yield: 1 Servings

2 Egg whites
1/2tsCream of tartar
1 Egg yolk
1cLow fat cottage cheese
1tbSoy flour
1/2 Package artifical sweetener
  Or 1 teaspoon

1. Beat the egg whites until frothy. Add the cream of tartar and beat just until stuff peaks form. 2. Combine the egg yolk, cottage cheese, soy flour and sweetener. Fold the mixture gently into the egg whites. 3. Lightly oil a griddle or frying pan with up to a tb of butter, margarine or vegetable oil. Heat until hot but not smoking. 4. Pour th batter into 3-inch pancakesin the hot skillet. Cook until browned on one sie, about 2 minutes, then turn and brown the other side.
